Our Projects

More than 90% of continuous cooking systems utilized in Hotels, Institutions, HostelKitchens etc. are based on conventional household-type open-flame cooking arrangement based on LPG. Conventional LPG-Based Cooking Suffer From These Problems:

  • Safety: Open flame comprises safety of kitchen staff
  • LPG is required to be brought to point of cooking in pipelines. In case of fire from the flame LPG cylinders can blast
  • Inefficiency: LPG burners are highly inefficient with less than 50% energy actually making it to the food
  • Warrants investment in air handling & circulating draft units
  • High LPG Use: Open flame leads to increase in ambient temperatures. This in turn leads to high electricity consumption due to air handling and ventilating units
  • Uneven Cooking: due to central flame spread out over a large vessel area
  • Air Pollution: Flue gas/fly ash from fuel in kitchen effects cook’s health and can contaminate food

Minimizing Fuel Cost in MWS Smart Kitchen by using Solar Thermal Heat

For deciding fuel for commercial cooking from the available following things are

1) Minimum Cost: Fuel with minimum cost will be a preferred choice
2) No Residue: No contamination of food from Food Flue Gas
3) Fuel Security: Fuel should be available for uninterrupted process

  • Faster Cooking: Cooking on solar reduces cooking time to almost half as compared to conventional direct cooking method
  • Integrates with most Fuel Types: Can be integrated with backup systems for Lean/Non-Solar periods
  • Early Payback: Solar Cooking is cheapest fuel, as compared with other fossil fuels. Its cost can be recovered in 3-4. Thereafter system works on sunlight for free of cost
  • No Food Contamination: Unlike burning of fossil fuels, no Flue Gases/air pollution is there in hence no food contamination. USFDA Approved Food Grade Thermic Oil is used in the system, which is safe for cooking applications
  • Optional Energy Storage: To store any additional heat coming from solar field, that can be used during non-sunny period

(D) Case Studies


1. Solar Thermal-LPG Hybrid Smart Kitchen at Power Plant Staff kitchen

MWS has recently commissioned India’s most modern, and automated Smart Kitchen at NTPC, Dadri which has been hybridized with Concentrating Solar Thermal M90 Dishes and efficient LPG Fired Burner.

Configuration of Concentrating Solar M90 Dishes at NTPC, Dadri:

Peak Capacity at STC 80,000 kcal/hr.
Application Cooking (Baking, Boiling and Frying)
System Configuration Hot Thermic Oil at 220°C
Integration Hybridized with LPG Thermic Oil Heater
Peak Capacity at STC 80,000 kcal/hr
Total Concentrator Area 2 Nos. of M90 Dishes totalling 180 sq. meters

During day time (sunny hours) Smart Kitchen uses conc. Solar heat from M90 dishes for cooking, and during non-sunny period, LPG Fired burner automatically fires up, to provide completely automated-uninterrupted heat to the kitchen for cooking.

Solar Thermal M90 Dishes at NTPC bear low running cost, hence payback period of this system is coming out to be less than four years. After that time system will run on Solar Energy for free of Cost for designed 25 years lifetime.
